"They are the best of what we know as Tapas. Olive Oil is heated in a Pan, when hot, Garlic and Chilli are added then the tailed and dried shrimps are added, these are then cooked through at a very high heat for a couple of minutes so that the juice and the Oil amalgamate. These are then served in the same pan sizzling at the table! They are eaten with white bread dipped in the Oil... mmmh simply divine. | ||||||||||||||

What is the fish of the day? Just ask. Most restaurants offer fresh fish as specials of the day and love to be asked. Normally the fish is 'a la plancha' fried in a pan over a gas flame. Contact with the direct heat cooks the fish very quickly, sealing the outer coating and holding the juiciness in, and it gives it a wonderful flavour. For those who love fish a must are Cherne, Sama or Vieja restaurants – also prepared 'a la plancha'. The Corvina , Mero and Caballa are also top class Restaurants.

If it is Fish or Meat that you would like: then you must have a side order of 'papas arrugadas', Potatoes boiled with Sea Salt. They are eaten with their skins on! These are served with Mojo-Tunke, Olive oil and Garlic are the staple ingredients of all Mojo dips, peppers and parsley are usually added too. Mojo picón is red and spicy; Mojo verde is a delicate herb sauce and a delicacy is the Mojo de Cilantro which is made of Coriander leafs This is the secret recipe if you would like to make Mojo yourself. To end a wonderful Culinary evening maybe a 'café solo' (Espresso) with a Brandy. | ||||||||||||||
